Ingredients
- 2 tablespoons poblano, seeded and diced
- 2 tablespoons celery, diced
- 2 tablespoons shallots, thinly sliced
- ½ cup vine-ripened tomato, sliced
- 4 slices fresh serrano pepper
- 2 tablespoons fresh lime juice
- ¼ cup fresh orange juice
- ¼ cup cucumber, sliced
- 3 tablespoons extra virgin olive oil
- 1 teaspoon kosher salt
- 1½ teaspoons garlic, minced
- â…› cup cilantro, chopped
- ½ cup tomato juice
- ½ cup blue corn tortilla chips
Directions
- In a medium size mixing bowl, combine poblano, celery, shallots, tomato, serrano, lime juice, orange juice, cucumbers, olive oil, salt, garlic and cilantro.
- Pour tomato juice in an Addie small glass bowl and place vegetable ceviche mixture on top of the tomato juice.
- Crush the blue tortilla chips and sprinkle around the bowl.
