Ingredients
- 1 cup very ripe peaches, chopped
- 8 fresh mint leaves
- ¼ cup fresh lemon juice
- ½ cup bourbon
- 8 ounces ginger beer
Directions
- Combine peaches, mint and lemon juice in a cocktail shaker or glass jar. Using a muddler or the end of a wooden spoon, smash the ingredients until the peaches break up and juices are released. Add the bourbon; cover the container and shake to combine. Pour into two cocktail glasses filled with ice and top with ginger beer. Stir to combine and serve immediately.
