How to Make an Easter Egg Cake
Every holiday deserves a cake and Easter is no exception! While I previously shared the recipe for my classic spring carrot cake, this cake is completely different. It is bold, colourful and designed to look like a beautiful blue robin’s egg. I kept the cake layers a classic yellow cake base and folded in chocolate mini eggs. Chocolate mini eggs belong in everything when they are in season, right? Having them hidden in the cake also adds for a fun surprise when you serve and cut into the cake. No one would be expecting a cake filed with chocolate mini eggs. I think the Easter Bunny is going to like this one!
To create the speckles, I used The Cake Blog’s method of creating a brown “paint” with 1 tablespoon of cocoa powder and 1 tablespoon water. Simply mix until the cocoa powder is fully dissolved and dip a pastry brush into the mixture. Flick the bristles at the cake until the cake is covered in speckles. An alternative method is to mix brown food colouring gel with water and use the same pastry brush method. It can be a little messy, so cover up that work surface. Happy Easter!
